Modified Atmosphere Cold storage is used mainly for the storage of fresh vegetables. In this type of storage, a modified atmosphere is created and maintained. This is done by maintaining a pre-determined temperature and high humidity throughout the room.

The technology behind this kind of atmosphere extends the shelf life of foods, especially fruits and vegetables. The main focus of this technology is to reduce the respiration rate of the food product which causes early ripening and decay. Although Modified Atmosphere Cold storage provides lesser control that a controlled atmosphere cold storage, the former also thrives on the modification of temperature and gaseous composition of the storage room. An optimal balance of oxygen and carbon dioxide is maintained which is critical and different for each product.

The idea is to control respiration, retard the microbial growth specially molds and minimize enzymatic spoilage.
